Ingredients
- 240 g Pokka Sliced Reindeer Meat (1 pack), thawed
- 1 soft baguette or 2 long sub rolls
- 1 onion
- 6 tbsp extra virgin olive oil or vegetable oil
- ready-made crispy fried onions
- melted butter, for brushing (optional)
- salt and freshly ground black pepper
- green salad, to serve
- 2 dl vegetable stock, for the sauce (optional)
- 1 tsp cornflour, for the sauce (optional)
Method
- Finely chop the onion. Heat 4 tbsp of the oil in a frying pan and fry the onion until golden but not burnt, 5–8 minutes. Tip it into a bowl.
- Add the rest of the oil to the pan and heat it until very hot. Separate the reindeer slices, season them with pepper and a little salt and add them to the pan. Fry quickly for 1–2 minutes, stirring with a wooden spoon, then mix in the fried onion. Lift the meat and onion into a bowl and keep warm.
- For the sauce, pour the vegetable stock into the same pan and scrape up the browned bits from the bottom. Mix the cornflour with a little cold water, stir it into the boiling stock and simmer for a minute, until thickened. Season with pepper.
- Heat the oven to 200 °C. Split the baguette lengthwise without cutting all the way through. Brush the inside with a little melted butter, and the outside lightly too if you like, put it on a baking tray and warm it in the oven for about 4 minutes.
- Fill the baguette with the meat and onion and scatter crispy onions on top. Serve with a green salad and the sauce.
